Sometimes referred to as 'pigweed', this plant is much prettier than it sounds and has a variety of applications. Whether to add some floral to your garden, to eat the leaves or to use the seeds as a grain or ground into flour - Amaranth does not disappoint. Red Leaf Amaranth can be used in salads or cooked similar to Spinach - very popular in Asian cuisine.

When: Plant indoors for transplant after frost risk has dissipated (6-8 weeks before frost is anticipated to end) or plant post frost in well-drained soil above 12 degrees Celcius.

How: Sprinkle on top of moistened, prepared soil, approximately 12" apart. Lightly cover with soil as this plant thrives in sunlight. Water until germination.

Best Neighbour: Sweetcorn - Amaranth's leafy nature protects it and helps to keep the soil moist.
