Eggplant Black Beauty: this variety of open-pollinated and heirloom eggplant has been a favourite for vegetable gardeners throughout decades. When picked at peak maturity, these large glossy fruits offer impressive yields.

Meaty in flavour and texture, eggplants are great in the garden. 

Planting Guide: Start indoors about 8 weeks prior to the last seasonal frost. Sow 1/4" deep in moist soil. Full sun/heat lamp recommended. Harden before transplant. Sow to well worked soil - about 24-36" apart, in rows 36" or more. Water regularly. Mulch recommended. 

Harvest: About 70 days, when the eggplant is about 4-5" in length. Cut at the bloom, leaving about 1" of stem. 

Tip: Be sure to pick them when they are firm, black and shiny - that is when it is ripe for the picking. Also watch to ensure that you are not planting it in a bed that might have contained tomatoes, peppers or eggplants in previous years.
