Variegata di Castelfranco is both vibrant with its green leaves and red freckles, but also another hardy chicory able to withstand some of the cooler north American temperatures.
When: Can be sown in April or once the soil can be worked through to August for a fall harvest.
Planting Guide: Sow 1/4" deep, 4" apart in rows 8" apart. Well-drained, composted soil is best.
Harvest: Can be harvested any time once the leaves have started to open or 'bloom'. The head is ripe once plump and firm - typically around 65 days. Harvest the whole head by slicing right above the soil.
