Callaloo is Amaranth - the name callaloo best describes the stew to which amaranth is the main ingredient. Both leaves and seeds are edible.
Planting Guide: Due to the extended growing season, these are best started indoors in Canada, although notable that they do not do as well with transplant like many other plants and yield may be impacted as a result Sow 6-8 weeks prior to the last seasonal frost, harden and transplant once frost has passed and soil temperatures have warmed. Sow 1/4" deep in moist, well drained soil about 24" apart. Water weekly. Full sun. Slow release fertilizer recommended.
Harvest: 110-150 days - young leaves are tastiest, however early harvest will stunt growth. You may wish to plant a few plants for their leaves and another just for seeds.
