A favourite amidst italian cuisine and chef's alike is the Cannelini Bean - a starchy, potato like addition to soups (re. minestrone), stews, and salad dishes. They are essentially fat free, a great source of fibre and an even greater source of protein - 11 g in 1/4 cup!

When: In late May once the risk of frost has dissipated or in pots in late April/early May for transplanting.

Planting Guide: Sow 1" deep into the soil, approximately 3" apart, in rows about 30" apart. Full sun. This is a bush bean so although it may not climb, could still use a small pole or small trellis for support. Water as needed - soil should be just moist but not too damp.

Harvest: About 75 days or when leaves begin to brown and fall. The plant is best harvested when dry. Twist and pull the individual pods.

Cannelini Beans if stored in a cool, dry spot can be used for as long as two years - incredible! Who needs a protein shake when you can pull Cannellini beans right from your garden?
